Ingredients
Carne
1 x large carrot
1/4 x small red onion
1/2 x celery stick
1/3 x red bell pepper
1/2 x aubergine
1/2 x cup almonds – soaked overnight
1/2 x tbsp fresh thyme
Sauce
1 x tbsp sweetener of your choice – e.g juice from soaked dates
1 x cup of sun soaked tomatoes in its own liquid (oil)
1/2 x chopped fresh tomato
2 x sprigs of fresh thyme or 1 x tsp of dried thyme
1 x small white onion or shallot
1 tsp of smoked paprika
1 x tbsp of lemon
Rice
1 x medium cauliflower – about 5 florets
Instruments
Sharp knife
Food processor (optional)
Bowl
Chopping board

Vegetable peeler / spiralizer
Actions
Carne
- Blend the almonds in a food processor (throw the soaked water away)
- Chop the celery, carrot and bell pepper into small pieces and place in a bowl
- Blend the onion, thyme and aubergine together
- With a fork mix all the above ingredients together in a bowl and leave aside.
Sauce
- Mix all the ingredients together in a food processor until smooth and slightly runny, add water if it is too thick.
Rice
- Use food processor to chop the cauliflower into the size of rice grains (you may need to pulse it) or use a heavy knife to chop shavings off and place in a bowl.
Assembly time
- Add the Carne and sauce until it resembles a thickness you like, then pour this on the rice – or keep separate if you wish
